Jeff,
I think you have to be open to the possibility that birth years were often off by several years back in the 1800s. The 1860 Census shows 3 John Snyders in Huntingdon County born 1856 +/- 5years:
John Snyder, b. 1853...Jackson, Huntingdon County. Father: Washington Snyder
John Snyder, b. 1850...Porter, Hungtingdon County. Father: David Snyder
John A. Snyder, b. 1852...Porter, Huntingdon County. Father: Samuel Snyder, mother: Rachel

The 1870 Census shows:
John Snyder, Jackson Twp still in Jackson Twp, though living with the Carey family
John Snyder b. 1850 now in Dublin Twp.
...and finally, another John Snyder, this time shown b. 1856, living in Oneida Twp, just outside Huntingdon, with Michael & Margaret Nail, possibly an aunt and uncle? He's at school, so he's not there as a laborer, which makes me think they're some sort of relatives.

I'd look closer at these three, especially the last one, as being possibilities for your man. Of course, the other possibility is that the family moved between 1856 and the 1860 Census.
